Goat Cheese and Green Onions Muffins - Recipe

I love this mini muffins! They are a twist from the usual sweet ones. They were very successful among my friends and they are perfect for a brunch. 


You'll need these ingredients for around 20 mini muffins:
- 1 large egg
- 1 cup of milk
- 1 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 4 1/2 tbsp unsalted butter
- green onions
- 115 gr goat cheese 

First preheat your oven at 180ºc. Combine in a small bowl the goat cheese with 2 tbsp of milk. Sift together the flour, baking powder and salt into a bowl. In another small bowl melt the butter and whisk together with the remaining milk and the egg. Chop your green onions. Add butter mixture and green onions into the flour bowl until they're combined. Grease the mini muffin tins with butter and sprinkle a bit of flour on top, this will help the muffins to not stick. Put the batter inside and top with a bit of the goat cheese. Bake for 10-15 min and voila! They are ready to eat! if you're making them ahead of time just place them in the microwave for a couple of seconds just before serving.
